Follow The Directions

01

Step

Prepare the dredging station: Place 1/2 cup of flour in a shallow dish. In a separate shallow dish, combine the remaining flour with panko bread crumbs, seasoned salt, garlic powder, lemon pepper, black pepper, onion powder, and cayenne pepper. In a third shallow dish, whisk the eggs. (5 minutes)

02

Step

Heat the oil: Pour the vegetable oil into a large skillet and heat over medium-high heat until shimmering. (3 minutes)

03

Step

Fry the fish: Dredge each piece of fish in the flour, then dip in the egg mixture, and finally coat with the panko-flour mixture. Gently place the coated fish in the hot oil, being careful not to overcrowd the pan. Fry for 2-3 minutes per side, or until golden brown and cooked through. Transfer to a plate lined with paper towels to drain excess oil. (8-10 minutes)

04

Step

Warm the tortillas: Heat the corn tortillas in a dry skillet over medium-low heat, or wrap in a damp paper towel and microwave for 30 seconds, until pliable. (2-3 minutes)

05

Step

Make the Chipotle-Lime Salsa: In a small bowl, whisk together the ranch dressing, salsa, minced chipotle chile, and lime juice. (2 minutes)

06

Step

Assemble the tacos: Divide the fried fish evenly among the warmed tortillas. Top with a generous spoonful of the chipotle-lime salsa and a sprinkle of shredded cabbage. Serve immediately with lime wedges.

For extra crispy fish, double dredge it in the flour mixture before coating in the egg.
If you don't have chipotle chiles, a pinch of smoked paprika can add a similar smoky flavor to the salsa.
Feel free to add other toppings like avocado, cilantro, or pickled onions.
