Sprinkle with some of the French onion soup mix, followed by a layer of bacon pieces, then a layer of potato slices, some of the Cheddar cheese, and drizzle with some of the heavy cream. Repeat layering, ending with a final layer of cheese. (20 minutes)

Coat a piece of aluminum foil with cooking spray; cover the baking dish with foil, coated-side down. (2 minutes)

Bake in the preheated oven until potatoes and onions are tender, 40 to 50 minutes. Remove foil; continue baking until nicely browned and bubbly, about 10 minutes more. (60 minutes)

For a vegetarian option, skip the bacon and consider adding sauteed mushrooms for an earthy flavor.
Ensure the potatoes are sliced thinly for even cooking.
If the top is browning too quickly, cover loosely with foil during the last 15 minutes of baking.
Leftovers (if there are any!) are fantastic reheated or served cold.
