Gradually add the sugar, one tablespoon at a time, beating well after each addition. Continue beating until stiff, glossy peaks form and the mixture is very smooth. This should take 4 to 5 minutes.

Gently fold in the vanilla extract, peppermint extract, and green food coloring until evenly distributed. (2 minutes)

Drop the meringue mixture by small spoonfuls (about 1/2 teaspoon) onto the prepared baking sheet. Top each meringue with a chocolate kiss.

Spoon a small amount (about 1 scant teaspoon) of the remaining meringue over the chocolate kiss, smoothing it to cover completely. (10 minutes)

Place the baking sheet in the preheated oven, then immediately turn the oven OFF. Do not open the oven door. Leave the meringues in the oven overnight (at least 8 hours) or until the oven is completely cool. (8 hours)

Once cooled, gently remove the meringues from the baking sheet. They should be crisp and dry.

For best results, use room temperature egg whites.
Ensure your bowl and beaters are grease-free for optimal meringue formation.
Gel food coloring provides a more vibrant color with less liquid, which is ideal for meringues.
Do not be tempted to open the oven while the meringues are drying, as this can cause them to crack.
Store the meringues in an airtight container at room temperature to maintain their crispness.
