Follow The Directions

01

Step

In a large pot, bring water to a rolling boil. Gently add the peeled and halved potatoes. Reduce heat to a simmer and cook until the potatoes are fork-tender, approximately 15-20 minutes.

02

Step

Introduce the green onions, green beans, baby carrots, butter, salt, and pepper to the pot with the potatoes. Continue to simmer until all vegetables are tender, allowing their flavors to meld beautifully. Then, add the fresh green peas.

03

Step

In a separate medium bowl, whisk together the half-and-half and all-purpose flour until smooth and free of lumps. Slowly pour this mixture into the simmering vegetables, stirring constantly to prevent scorching. Continue to cook, stirring continuously, until the soup has slightly thickened to your desired consistency. Serve hot and enjoy!

For an extra layer of flavor, consider sautéing the green onions in butter before adding them to the soup.
If fresh green peas are unavailable, frozen petite peas are a suitable substitute. Add them towards the end of the cooking process to retain their vibrant color and sweetness.
Adjust the amount of half-and-half and flour to achieve your preferred soup thickness. For a richer soup, you can substitute cream for half-and-half.
