For a richer flavor, use brown butter in the dough. Add a pinch of cardamom to the dough for a traditional Danish twist. If you don't have compressed fresh yeast, you can use active dry yeast. Use about 1.5 teaspoons and proof it in the warm milk with a teaspoon of sugar. The custard can be made a day ahead and stored in the refrigerator. Experiment with different flavors for the icing, such as coffee or raspberry.
