Follow The Directions

01

Step

In a mixing bowl, whisk together the egg-free mayonnaise, sliced green onions, yellow mustard, black pepper, and paprika until well combined. (2 minutes)

02

Step

Gently fold in the diced avocados. Sprinkle the kala namak (black salt) evenly over the avocado mixture and stir to incorporate. (3 minutes)

03

Step

Divide the avocado salad evenly between 4 slices of potato bread. (2 minutes)

04

Step

Top each with a remaining slice of potato bread to create sandwiches. Serve immediately or chill for later. (1 minute)

For the best flavor, use ripe but firm avocados. Avoid avocados that are too soft, as they will become mushy when mixed.
Kala namak, or black salt, has a distinctive sulfurous flavor that mimics the taste of eggs. If you can't find it, you can use regular sea salt, but the flavor will be slightly different.
Potato bread adds a subtle sweetness and soft texture to the sandwich, but you can substitute with your favorite bread.
To prevent the avocado from browning, you can add a squeeze of lemon or lime juice to the salad.
