Follow The Directions

01

Step

Sauté the aromatics: Heat 1 teaspoon of olive oil in a skillet over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes. Remove from heat and transfer to a bowl.

02

Step

Prepare the cheese mixture: In a microwave-safe bowl, combine the softened cream cheese and blue cheese. Microwave on high for 25 seconds, or until slightly melted and easily combined.

03

Step

Combine the filling: Add the cheese mixture, chopped spinach, bread crumbs, minced garlic, salt, and pepper to the bowl with the sautéed onions. Mix well until all ingredients are evenly distributed. Place the stuffing mixture in the freezer for 15-20 minutes to firm up slightly for easier handling.

04

Step

Preheat and prepare: Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper to prevent sticking.

05

Step

Prepare the salmon: Cut the salmon fillet into 2 equal portions. Carefully slice each portion horizontally, creating a pocket for the stuffing, but leaving one side connected to form a butterfly cut.

06

Step

Sear the salmon: Heat the remaining 1 teaspoon of olive oil in the same skillet over medium heat. Gently sear the salmon fillets for about 15 seconds per side, just until lightly colored. This will add a nice texture and flavor to the fish. Transfer the seared salmon to the prepared baking dish.

07

Step

Stuff the salmon: Remove the stuffing from the freezer. Divide the chilled stuffing into two equal portions and gently pack each portion into the prepared pockets of the salmon fillets.

08

Step

Bake to perfection: Bake in the preheated oven for 15-17 minutes, or until the salmon is cooked through and flakes easily with a fork.

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the stuffing mixture for a subtle kick.
If you don't have blue cheese on hand, feta or goat cheese can be used as a substitute.
Garnish the baked salmon with a squeeze of fresh lemon juice and a sprinkle of fresh herbs like parsley or dill before serving.
