Preheat oven to 400 degrees F (200 degrees C). Grease and flour six 9-inch round cake pans. (5 minutes)

In a large bowl, beat 3/4 cup plus 2 tablespoons butter, milk, sugar, egg whites, and vanilla extract with an electric mixer until smooth and well combined. Gradually add the flour mixture, mixing until just combined. Be careful not to overmix. (8 minutes)

Divide the cake batter evenly into 6 separate bowls. Add a different food coloring to each bowl, starting with just 1-2 drops and increasing until you achieve your desired vibrancy. Mix well. (10 minutes)

Bake each cake layer in the preheated oven until a toothpick inserted into the center comes out clean, approximately 15-20 minutes. Let the cakes cool in the pans for a few minutes before inverting them onto a wire rack to cool completely. (20 minutes)

In a chilled glass or metal bowl, beat heavy cream with an electric mixer until stiff peaks form. In a separate bowl, gently combine confectioners' sugar and mascarpone cheese until smooth. Fold the mascarpone mixture into the whipped cream until just combined. (12 minutes)

Once the cakes are completely cool, place one layer on a serving plate or cake stand. Spread a generous amount of frosting evenly over the top. Repeat with the remaining layers, stacking them to create the rainbow effect. Frost the top and sides of the cake with the remaining mascarpone cream frosting. (20 minutes)

Refrigerate the cake for at least 2 hours before serving to allow the frosting to set and the flavors to meld. (120 minutes)

For best results, use gel food coloring, as it's more concentrated and won't alter the consistency of the batter as much as liquid food coloring.
Make sure all your ingredients are at room temperature for even mixing.
To prevent the cake layers from sticking, line the bottom of the cake pans with parchment paper rounds.
If you don't have six cake pans, you can bake the layers in batches, but ensure the batter doesn't sit out for too long.
