Follow The Directions

01

Step

Preheat the oven to 425 degrees F (220 degrees C). Lightly grease a rimmed 13x18-inch baking sheet with cooking spray. (5 minutes)

02

Step

In a small bowl, whisk together 1 tablespoon of olive oil, honey, 1 teaspoon of salt, 1 teaspoon of sage, and 1/2 teaspoon of pepper until well combined. (2 minutes)

03

Step

Place the pork tenderloin on the prepared baking sheet. Generously rub the honey mixture all over the pork, ensuring it's evenly coated. (3 minutes)

04

Step

In a large bowl, combine the butternut squash, apple wedges, and sliced onion. Drizzle with the remaining 2 tablespoons of olive oil, 1 teaspoon of salt, 1 teaspoon of sage, and 1/2 teaspoon of pepper. Toss until the vegetables and apples are thoroughly coated. Arrange the mixture around the pork tenderloin on the baking sheet. (5 minutes)

05

Step

Bake in the preheated oven for 30 to 35 minutes, or until the vegetables are tender and the pork is cooked through. For the last 10 minutes, baste the pork with the pan juices to keep it moist and add a beautiful glaze. The internal temperature of the pork should reach at least 145 degrees F (63 degrees C) when measured with an instant-read thermometer. (35 minutes)

06

Step

Let the pork rest for 5-10 minutes before slicing and serving alongside the roasted squash and apples. This allows the juices to redistribute, resulting in a more tender and flavorful dish. (10 minutes)

For enhanced flavor, consider marinating the pork tenderloin in the honey-sage mixture for at least 30 minutes, or up to 4 hours, in the refrigerator before roasting.
Feel free to substitute other seasonal vegetables, such as Brussels sprouts or sweet potatoes, for the butternut squash. Adjust cooking times accordingly.
If the vegetables start to brown too quickly, loosely tent the baking sheet with foil during the last 10-15 minutes of cooking.
Serve with a sprinkle of fresh parsley or thyme for a pop of color and added aroma.
