Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. (5 minutes)
Place breakfast sausage in a large skillet and cook over medium-high heat, breaking it apart with a spoon, until evenly browned. Drain on paper towels. (10 minutes)
In the same skillet, cook the chopped onion until softened and translucent. Remove from skillet and set aside. (5 minutes)
