Step

Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with non-stick cooking spray.

Cut biscuits into quarters; arrange them to cover the bottom of the prepared baking pan. Bake in the preheated oven until biscuits have started to cook but are not quite done, approximately 5 minutes. Sprinkle with 1/3 cup of shredded Cheddar cheese.

In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Place a non-stick skillet over medium to medium-high heat. Spoon in the corned beef hash. Cook and stir until heated through and beginning to crisp up, about 5 to 8 minutes. Remove from heat. Pour in the egg mixture and continue to stir until the eggs have started to cook but are not fully set, about 30 seconds.

Spread the egg and hash mixture evenly over the partially baked biscuits. Sprinkle with the remaining Cheddar cheese. Spread the prepared country gravy evenly over the top and bake until cooked through and golden brown, approximately 45 minutes.

For a richer flavor, try using sausage gravy instead of country gravy.
Feel free to add other vegetables like diced onions or bell peppers to the corned beef hash for extra flavor and texture.
To prevent the biscuits from browning too quickly, cover the casserole with foil during the last 15 minutes of baking.
