Follow The Directions

Step

In a large soup pot or Dutch oven, brown the ground beef over medium-high heat. (10 minutes) Drain off any excess fat.

Add the chopped celery, onions, and green bell pepper to the pot. Sauté until the vegetables begin to soften. (5-7 minutes)

Stir in the chopped cabbage, kidney beans, tomato-vegetable juice cocktail, tomato juice, corn, diced tomatoes, and chili powder.

Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for at least one hour, or until the celery and cabbage are very tender. (60 minutes)

Stir in the garlic powder, salt, and pepper to taste. Adjust seasonings as needed.

For a vegetarian version, omit the ground beef and add an extra can of kidney beans or other beans of your choice. You can also add vegetable broth for extra flavor.
This soup freezes beautifully! Allow the soup to cool completely before transferring it to freezer-safe containers. It can be stored in the freezer for up to 3 months.
Feel free to add other vegetables to your liking, such as carrots, zucchini, or potatoes.
