In a large bowl, using an electric mixer, beat the eggs and egg whites on high speed until very light and fluffy, about 5 minutes. Gradually add the sugar and continue beating until well combined. (7 minutes)

Gently stir the slightly cooled butter-chocolate mixture, coffee, and vanilla extract into the egg mixture. Beat until everything is thoroughly combined. (3 minutes)

In a separate medium bowl, whisk together 1 cup plus 2 tablespoons potato starch, 1/4 cup plus 2 tablespoons matzo cake meal, cocoa powder, and salt. (3 minutes)

Gradually add the dry ingredients to the wet ingredients, beating with the electric mixer on low speed until just combined. Be careful not to overmix. Gently fold in the chocolate chips until evenly distributed. (5 minutes)

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached. (30 minutes)

For an even fudgier texture, consider using bittersweet chocolate chips instead of semisweet.
