For a non-alcoholic version, simply omit the rum and schnapps. You can add a splash of apple juice or a non-alcoholic butterscotch flavoring. Feel free to adjust the amount of brown sugar to your liking. Taste the cider after simmering and add more if needed. For a deeper spice flavor, lightly toast the whole spices in a dry pan before adding them to the cheesecloth. If you don't have cheesecloth, you can add the spices directly to the cider and strain them out after simmering.
