For a vegetarian version, substitute vegetable broth for the beef broth. Feel free to add other vegetables such as diced carrots, celery, or zucchini. If you don't have fresh tarragon, 1 teaspoon of dried tarragon can be used instead. For a richer flavor, sauté the green onions and mushrooms in a little olive oil before adding them to the soup.
