Divide the crawfish mixture evenly among the prepared ramekins. Sprinkle the top of each with a generous pinch of sweet paprika. (2 minutes)

Bake in the preheated oven for 10 to 15 minutes, or until the tops are golden brown and the thermidors are heated through and bubbly. (15 minutes)

For a richer flavor, substitute half-and-half or heavy cream for the milk.
If crawfish are unavailable, substitute with shrimp or lobster tails.

For easier cleanup, place the ramekins on a baking sheet before baking.
