Return the drained beef to the skillet. Add the salt, pepper, diced jalapeno, and diced red onion. Pour in the beer and cook until the onion becomes translucent and softened. (Approximately 3 minutes)

Reduce the heat to medium-low. Add the cubed Velveeta and shredded pepper jack cheese. Cook, stirring constantly, until the cheese is completely melted and smooth. (Approximately 5 minutes)

Stir in the drained black beans, undrained diced tomatoes and green chilies, and black olives (if using). Cook until heated through, stirring frequently. (Approximately 5 minutes)

Transfer the queso to a serving dish or individual bowls. Garnish with fresh chopped cilantro and serve immediately with your favorite tortilla chips, vegetables, or other dippers.

For a spicier queso, use a hotter variety of diced tomatoes and green chilies or add a pinch of cayenne pepper.
If you don't have beer on hand, you can substitute with beef or chicken broth for a similar depth of flavor.
Feel free to experiment with different cheeses, such as Monterey Jack or cheddar, to customize the flavor to your liking.
This queso can be made ahead of time and reheated. Store in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, stirring occasionally, until heated through.
