In a small nonstick skillet over medium heat, cook and stir bacon until crispy and browned, approximately 4-5 minutes. Transfer the bacon to a paper towel-lined bowl, reserving the rendered bacon grease in a separate small bowl.

Return the skillet to medium-high heat and add 1 teaspoon of the reserved bacon grease. Add the chopped mushrooms and minced green onions to the hot bacon grease. Cook until lightly browned and softened, about 3-4 minutes. Season with salt and pepper to taste. Transfer the mixture to a small bowl and keep warm.

Return the skillet to medium-high heat and add another 1 teaspoon of reserved bacon grease. Pour in the lightly beaten eggs and scramble until cooked through but still slightly moist, approximately 2-3 minutes. Season with salt and pepper to taste. Remove from heat and keep warm.

Place the cottage cheese in a microwave-safe bowl. Heat on 50% power until just warmed through, about 60-90 seconds, stirring halfway through to ensure even heating. Drain any excess liquid that may have accumulated. Transfer the warmed cottage cheese to one side of a serving bowl. Arrange the scrambled eggs on the other side. Top with the mushroom mixture and crispy bacon.

For an extra layer of flavor, consider adding a sprinkle of red pepper flakes or a dash of hot sauce to the scrambled eggs.
Feel free to substitute other vegetables for the mushrooms and green onions, such as spinach, bell peppers, or cherry tomatoes.
If you prefer a vegetarian option, omit the bacon and use olive oil or butter to sauté the vegetables.
For a creamier texture, use full-fat cottage cheese.
Adjust seasoning to your liking; a pinch of garlic powder or onion powder can also enhance the flavor.
