For a richer flavor, brown the chopped onion and celery in butter before adding them to the cornbread mixture. Feel free to customize the herbs and spices in the stuffing mix to your liking. Sage, thyme, and rosemary are excellent additions. If the dressing starts to brown too quickly, cover it loosely with foil during the last 15-20 minutes of baking. The gravy can be made ahead of time and reheated just before serving. This can save time on Thanksgiving Day.
