For a spicier relish, add 1-2 finely minced jalapeño peppers to the vegetable mixture. Sterilize jars by boiling them in water for 10 minutes before filling. The relish will thicken as it cools. If it becomes too thick, add a tablespoon or two of apple cider vinegar to loosen it up. This relish is delicious served with grilled meats, fish, or as a topping for tacos and salads.
