Preheat oven to 400°F (200°C). In a shallow baking pan, toss the thawed corn kernels with vegetable oil. (2 minutes)

Bake in the preheated oven, stirring occasionally, until the corn is lightly browned and slightly caramelized. Let cool completely. (8-10 minutes)

In a large bowl, mash one avocado with a fork until smooth. Coarsely chop the remaining avocado and add it to the bowl. (5 minutes)

Add the cooled corn, diced tomato, lime juice, red onion, minced garlic, pickled jalapeño peppers, salt, and cumin to the bowl. Gently stir to combine all ingredients. (3 minutes)

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. For a more intense flavor, chill for up to 24 hours. (30 minutes - 24 hours)

Serve chilled with yellow or blue corn tortilla chips.

For a smoother dip, you can use an immersion blender to partially blend the mixture, but be careful not to over-process it.
If you don't have pickled jalapeños, you can use fresh jalapeño peppers, but be sure to remove the seeds and membranes for a milder flavor.
Feel free to add other ingredients such as black beans, chopped cilantro, or a dash of hot sauce for extra flavor.
For best flavor, use ripe but firm avocados.
