Follow The Directions

01

Step

Preheat your oven to 375 degrees F (190 degrees C). (5 minutes)

02

Step

In a large bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, 1/2 cup of flaked coconut, baking powder, and salt. (5 minutes)

03

Step

In a separate large bowl, beat the eggs until light and creamy. Whisk in the applesauce, coconut milk yogurt, skim milk, vegetable oil, and honey until well combined. (5 minutes)

04

Step

Gently fold the dry ingredients into the wet ingredients, mixing just until the batter is combined. Be careful not to overmix. Stir in the chopped dried mango and crystallized ginger. (5 minutes)

05

Step

Spoon the batter into muffin cups, filling each about 3/4 full. Sprinkle the remaining 2 tablespoons of flaked coconut evenly over the tops of the muffins. (5 minutes)

06

Step

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. (20 minutes)

07

Step

Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. (10 minutes)

For a richer flavor, try using full-fat coconut milk yogurt.
If you don't have whole wheat flour, you can substitute it with all-purpose flour.
Feel free to adjust the amount of honey to your liking, depending on the sweetness of your dried mango.
These muffins are best enjoyed fresh, but they can be stored in an airtight container at room temperature for up to 3 days.
