For a richer flavor, use coconut milk in place of some of the regular milk. To prevent the crust from browning too quickly, cover the edges with foil during the last 15 minutes of baking. If you like a sweeter pie, increase the sugar by 1/4 cup. Make sure the milk is warm, but not boiling, to prevent the eggs from cooking prematurely. A blind-baked pie crust can improve the texture and prevent a soggy bottom.
