Once cool enough to handle, carefully slice off the top third of each sweet potato lengthwise. Gently scoop out the flesh, being careful to leave a sturdy shell. Place the scooped-out potato flesh in a mixing bowl and reserve the skins. (10 minutes)

Using a fork or potato masher, mash the sweet potato flesh until smooth. Stir in the Greek yogurt, cinnamon, ginger, nutmeg, salt, and pepper until well combined. (5 minutes)

Spoon the spiced sweet potato mixture back into the reserved sweet potato skins, mounding slightly. (5 minutes)

Sprinkle each stuffed sweet potato evenly with ½ teaspoon of brown sugar. (2 minutes)
