Follow The Directions

01

Step

Melt butter in a skillet over medium heat. Add the finely diced onion and cook, stirring occasionally, until softened and nearly translucent, about 4 minutes. Remove from heat and allow to cool completely to room temperature.

02

Step

In a large bowl, gently combine the ground beef chuck, ground lamb, cooled onion, Worcestershire sauce, salt, and freshly ground black pepper. Be careful not to overmix. Divide the mixture evenly into five portions. With a gentle hand, form each portion into a large burger patty. Press a shallow indentation in the center of each patty with your thumb. This helps prevent the burgers from bulging as they cook. Chill the patties thoroughly in the refrigerator for at least 4 hours, or up to 8 hours. Before grilling, allow the burgers to sit at room temperature for about 20-30 minutes to ensure even cooking.

03

Step

Preheat an outdoor grill to high heat. Once the grill is hot, lightly oil the grates to prevent sticking.

04

Step

Place the burger patties on the hot grill. Cook for approximately 5 minutes per side, or until they show distinct grill marks and the internal temperature reaches 155°F (68°C) for medium-rare, or your preferred doneness. Avoid pressing the burgers with a spatula, as this will squeeze out the flavorful juices. Flip the burgers only once during cooking. After removing from the grill, let the burgers rest for 1 minute before serving.

For the best flavor, use high-quality ground beef chuck with a fat content of around 80/20.
Ground lamb adds a rich depth of flavor to these burgers. If you prefer, you can substitute it with more ground beef chuck.
Chilling the patties allows the flavors to meld together and helps the burgers hold their shape during cooking.
Serve on buttered and toasted kaiser rolls or your favorite burger buns. Top with your preferred condiments, such as lettuce, tomato, onion, cheese, and your favorite sauces.
