Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners. (5 minutes)

In a medium bowl, whisk together the spelt flour, cocoa powder, baking powder, baking soda, and salt until well combined. This ensures even distribution of the leavening agents. (5 minutes)

In a large bowl, using an electric mixer, cream together the granulated sugar and melted coconut oil until light and fluffy. Beat in the eggs one at a time, incorporating each fully before adding the next. Stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk, beginning and ending with the dry ingredients. Mix until just combined. Be careful not to overmix. Gently fold in the chocolate chips. (10 minutes)

Fill each muffin liner approximately ¾ full with batter. (5 minutes)

Bake in the preheated oven for 17-20 minutes, or until a toothpick inserted into the center comes out clean. (20 minutes)

Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. (10 minutes)

For an even richer flavor, try using dark chocolate chips or adding a tablespoon of instant espresso powder to the dry ingredients.
Spelt flour can sometimes be a bit dry, so if your batter seems too thick, add an extra tablespoon or two of coconut milk.
Store leftover muffins in an airtight container at room temperature for up to 3 days.
