Stir in cilantro. (1 minute)

For a spicier soup, add a finely chopped chipotle pepper from the can along with the adobo sauce.
Adjust the amount of chicken broth to achieve your desired soup consistency.
To make this soup even heartier, add a cup of cooked rice or quinoa during the last few minutes of simmering.
This soup is even better the next day, as the flavors continue to develop.
