Cook Udon Noodles: Bring a large pot of lightly salted water to a boil. Cook udon in boiling water, stirring occasionally, until noodles are tender yet firm to the bite. Drain noodles and rinse with cold water. (10-12 minutes)

Sauté Chicken and Vegetables: Warm olive oil in a large saucepan or wok over medium heat. Add chicken and sauté until cooked through. Add onion, bell pepper, cabbage, carrots, and garlic. Cook, allowing vegetables to maintain most of their crispness. (6-8 minutes)

Combine and Finish: Pour soy sauce over vegetables and chicken; sauté briefly. Add udon noodles and toss well. Mix in gochujang and ketchup, thoroughly combining to mix all the flavors. Season with salt and pepper. (3-4 minutes)

For the best texture, use fresh or frozen udon noodles. Dried noodles will work, but the signature chewiness will be diminished.
Adjust the amount of gochujang to your spice preference. Start with less and add more to taste.
Feel free to add other vegetables such as mushrooms, bok choy, or snow peas for added nutrients and flavor.
Serve immediately for the best flavor and texture.
