In a large skillet, combine bacon and diced onion. Cook over medium-high heat, turning occasionally, until the bacon is crispy and the onion is softened and golden brown (approximately 8-10 minutes). Remove from skillet and set aside, leaving the rendered bacon fat in the pan.

Add olive oil to the skillet with the bacon fat and heat over medium heat. Season the chicken breasts with salt and pepper. Add chicken to the skillet along with half of the lemon juice. Cook until the chicken is cooked through (internal temperature of 165°F) and no longer pink in the center (approximately 5-7 minutes per side). Remove chicken from the skillet and set aside.

While the chicken is cooking, prepare the tomato-balsamic sauce. In a saucepan, whisk together balsamic vinegar, brown sugar, chopped rosemary, red pepper flakes, and the remaining lemon juice. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until the sauce thickens slightly (approximately 5-7 minutes). Stir in the crushed tomatoes with some of their juice and continue to simmer over low heat while the chicken finishes cooking.

In a separate skillet, melt butter over medium heat. Add gnocchi and pan-fry, stirring frequently, until golden brown and slightly crispy (approximately 6-8 minutes).

Steam the spinach. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add spinach, cover, and steam until the spinach is wilted and tender (approximately 2-4 minutes). Drain any excess water.

To assemble the dish: Arrange the bacon and onion mixture on a serving plate or individual plates. Top with steamed spinach, followed by the pan-fried gnocchi and the cooked chicken breasts. Drizzle generously with the warm tomato-balsamic sauce. Serve immediately.

For a richer flavor, use pancetta instead of bacon.
If fresh gnocchi isn't available, dried gnocchi can be used. Cook according to package directions before pan-frying.
Adjust the amount of red pepper flakes to your preference for heat.
A splash of white wine can be added to the tomato-balsamic sauce for extra depth of flavor. Add it along with the tomatoes.
Serve with a sprinkle of grated Parmesan cheese, if desired.
