Heat olive oil in a large stockpot over medium-high heat. Add chicken and cook, stirring occasionally, until browned on all sides. (Approximately 10 minutes)

Add chopped onion and minced garlic to the pot. Cook, stirring frequently, until the onion becomes translucent. (5-10 minutes)

Stir in diced tomatoes, black beans, kidney beans, pinto beans, corn, diced red, yellow and orange bell peppers, tomato paste, chili powder, cumin, cayenne pepper, salt, and pepper. Mix well to combine all ingredients. Bring to a simmer.

Cover the pot, reduce heat to medium-low, and simmer, stirring occasionally. Add more tomato paste as needed to thicken the chili to your desired consistency, until the peppers have softened. (Approximately 30 minutes)

For a richer flavor, try browning the chicken in batches to avoid overcrowding the pot.
Adjust the amount of cayenne pepper to control the heat level.
This chili tastes even better the next day, as the flavors have time to meld together.
Serve with your favorite toppings such as sour cream, shredded cheese, sliced green onions, avocado, or a dollop of Greek yogurt.
