For a richer flavor, use bone-in, skin-on chicken thighs instead of chicken breast. Cook the thighs until tender, shred the meat, and discard the skin and bones. Add a touch of heat by using pepper jack cheese instead of Monterey Jack. Freshly grated Monterey Jack cheese will melt more evenly than pre-shredded cheese.
