In a large saucepan, bring 4 cups of water to a rolling boil. (5 minutes)

Remove the saucepan from the heat. Stir in the tea bags and fresh mint leaves. Cover the saucepan again and let the mixture steep for 30 minutes, allowing the tea to infuse with the rhubarb and mint.

While the tea is steeping, combine the sugar and lemon juice in a large pitcher. (2 minutes)

Strain the rhubarb and tea mixture through a fine-mesh sieve into the pitcher, pressing on the solids to extract as much liquid as possible. Discard the spent rhubarb, tea bags, and mint leaves. (5 minutes)

Using a wooden spoon, stir the tea mixture until the sugar is completely dissolved. (3 minutes)

Add the remaining 4 cups of cold water to the pitcher and stir gently to combine. (1 minute)

Serve the Rhubarb Iced Tea over ice. Garnish with fresh mint sprigs or a slice of lemon, if desired.

For a deeper rhubarb flavor, use a mix of red and green rhubarb stalks.
Adjust the amount of sugar to your preference. Start with ¾ cup and add more to taste.
Experiment with different types of tea. Green tea adds a subtle grassy note, while herbal teas like hibiscus can enhance the color and flavor.
