Follow The Directions

Cook the penne pasta according to package directions until al dente. Drain well, reserving about 1/2 cup of the pasta water. (Approximately 10-12 minutes)

In a large skillet, melt 2 squares of the Italian Herb Saute Starter over medium-low heat. Allow it to melt slowly, just until it begins to bubble gently. (Approximately 2-3 minutes)

Add the chicken pieces to the skillet and sauté until golden brown and cooked through, reaching an internal temperature of 165°F (74°C). (Approximately 13-18 minutes)

Remove the cooked chicken from the skillet and set aside.

Melt the remaining 1 square of Italian Herb Saute Starter in the same skillet. Add the chopped onion and cook until softened and translucent. (Approximately 2-3 minutes)

Add the cooked pasta and chopped tomatoes to the skillet. Toss to coat everything in the flavorful sauce. If the pasta seems dry, add a splash or two of the reserved pasta water to loosen it up.

Return the cooked chicken to the skillet and gently toss to combine with the pasta and vegetables.

Serve immediately, garnished generously with freshly grated Parmesan cheese.

For a richer flavor, use sun-dried tomatoes instead of fresh tomatoes.
Add a splash of dry white wine to the skillet along with the tomatoes for added depth of flavor.
Garnish with fresh basil leaves for a pop of color and freshness.
If you don't have Italian Herb Saute Starter, you can substitute with 2 tablespoons of olive oil, 1 teaspoon of dried Italian herbs, and a pinch of red pepper flakes.
