Follow The Directions

01

Step

Preheat the oven to 425 degrees F (220 degrees C).

02

Step

In a large bowl, toss Brussels sprouts, apple, and pancetta with 1 tablespoon of olive oil and rosemary. Spread the mixture in a single layer on a sheet pan.

03

Step

In the same bowl, toss the chicken thighs with the remaining 1 tablespoon of olive oil. Place the chicken thighs on the sheet pan, leaving space between them and the Brussels sprout mixture. Season the chicken generously with salt and pepper.

04

Step

Bake in the preheated oven, stirring the Brussels sprouts mixture every 15 minutes to ensure even cooking, until the chicken is cooked through and the juices run clear, about 40 to 45 minutes. An instant-read thermometer inserted into the thickest part of a chicken thigh should read at least 165 degrees F (74 degrees C).

For a vegetarian option, substitute the pancetta with 1/2 cup of walnuts or pecans for added crunch and flavor.
Feel free to experiment with other herbs like thyme or sage for a different flavor profile.
If you like a bit of sweetness, drizzle a tablespoon of maple syrup over the Brussels sprouts mixture during the last 10 minutes of baking.
Serve this dish with a side of quinoa or roasted sweet potatoes for a complete and satisfying meal.
