Preheat your oven to 300°F (150°C). (5 minutes)

Lightly grease two standard muffin tins with cooking spray. (2 minutes)

In a large mixing bowl, combine the flour, sugar, almond milk, 1 cup plus 2 tablespoons of vegetable oil, beaten eggs, chia seeds, almond extract, vanilla extract, baking powder, and salt. Mix until just combined; do not overmix. (5 minutes)

Gently scoop the batter into the prepared muffin tins, filling each cup about two-thirds full. (5 minutes)

Bake in the preheated oven for approximately 40 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are lightly golden brown. (40 minutes)

Remove the muffins from the oven and let them cool in the tins for a few minutes before transferring them to a wire rack to cool completely. (10 minutes)

For an extra nutty flavor, toast the chia seeds lightly in a dry pan before adding them to the batter.
Store the cooled muffins in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
Feel free to substitute other non-dairy milk options like soy or oat milk.
