Follow The Directions

01

Step
40 mins

In a saucepan, combine 2 cups of water and wild rice. Bring to a boil, then reduce heat to medium-low, cover, and simmer until the rice is tender. (30-45 minutes). Drain any excess liquid, fluff the rice with a fork, and cook uncovered for approximately 5 minutes more.

02

Step
45 mins

Meanwhile, in a separate saucepan, bring the remaining 1/2 cup of water and brown rice to a boil. Reduce heat to medium-low, cover, and simmer until the rice is tender and all the liquid has been absorbed (about 45 minutes).

03

Step
6 mins

In a large nonstick skillet, combine the cherries, brown sugar, and sliced almonds. Cook and stir over medium heat until the brown sugar melts and the cherries and almonds are nicely coated (approximately 6 minutes).

04

Step
5 mins

Stir in the cooked brown rice, wild rice, celery, fresh orange juice, red wine vinegar, and grated orange zest. Continue to cook, stirring frequently, until everything is heated through (around 5 minutes).

For a richer flavor, toast the wild rice in a dry pan for a few minutes before cooking.
Consider adding a pinch of cinnamon or nutmeg to enhance the warm, comforting notes of the dish.
This recipe pairs wonderfully with roasted chicken or grilled salmon.
