For a richer flavor, toast the pecans in a dry skillet over medium heat for 5-7 minutes, or until fragrant and lightly browned, stirring frequently. Let cool before chopping.
If you don't have cherry preserves, you can substitute with raspberry or fig preserves.
Feel free to add other seasonal fruits, such as apples or cranberries, to the salad.
The vinaigrette can be made ahead of time and stored in an airtight container in the refrigerator for up to 3 days. Bring to room temperature and whisk before using.
For a vegetarian option, omit the Gorgonzola cheese.
