Follow The Directions

01

Step

Preheat oven to 325°F (165°C). Line 24 cupcake cups with paper liners. (5 minutes)

02

Step

In a large mixing bowl, combine the Amish friendship bread starter, eggs, vegetable oil, ½ cup milk, granulated sugar, ½ teaspoon vanilla extract, baking powder, baking soda, and salt. Mix until thoroughly combined. (5 minutes)

03

Step

Gradually mix in the all-purpose flour and cherry gelatin powder until just combined. Do not overmix. (3 minutes)

04

Step

Spoon the batter evenly into the prepared cupcake liners, filling each about two-thirds full. (5 minutes)

05

Step

Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean, approximately 20 to 25 minutes. (25 minutes)

06

Step

Remove the cupcakes from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. (5 minutes)

07

Step

While the cupcakes are cooling, prepare the buttercream frosting. In a large bowl, beat the vegetable shortening and softened butter with an electric mixer on medium speed until light and fluffy. (5 minutes)

08

Step

Add the vanilla extract. Gradually beat in the sifted confectioners' sugar, one cup at a time, stopping to scrape down the sides of the bowl as needed. (10 minutes)

09

Step

Add the milk, one tablespoon at a time, until the frosting reaches a smooth and spreadable consistency. (2 minutes)

10

Step

Once the cupcakes are completely cool, frost them generously with the buttercream frosting. (10 minutes)

11

Step

If desired, sprinkle each cupcake with a few white chocolate chips for garnish. (2 minutes)

For a richer cherry flavor, you can add a teaspoon of cherry extract to the batter.
Be careful not to overmix the batter, as this can result in tough cupcakes.
If the buttercream frosting is too thick, add a little more milk, one teaspoon at a time, until you reach the desired consistency.
These cupcakes are best stored in an airtight container at room temperature.
