Follow The Directions

01

Step

In a large skillet, heat the olive oil and butter over medium heat. Add the diced onion and a pinch of salt. Cook, stirring occasionally, until the onion becomes softened and translucent, about 6-7 minutes.

02

Step

Add the diced red bell pepper, sliced jalapeño, and minced garlic to the skillet. Continue to cook, stirring frequently, until the peppers are fragrant and slightly softened, approximately 3-4 minutes.

03

Step

Stir in the diced tomatoes, ground cumin, black pepper, and cayenne pepper. Cook for another 1-3 minutes, allowing the flavors to meld together.

04

Step

Incorporate the diced zucchini, green beans, vegetable broth (or water), and another pinch of salt. Cook until the zucchini is almost tender, around 5-6 minutes.

05

Step

Finally, add the corn kernels and lima beans to the mixture. Cook, stirring occasionally, until everything is heated through and the flavors have harmonized, about 3-5 minutes. Adjust seasoning with salt and pepper to taste.

For a creamier succotash, stir in a tablespoon of heavy cream or crème fraîche at the end.
If fresh corn is unavailable, frozen corn works perfectly well. Just be sure to thaw it slightly before adding it to the skillet.
Feel free to experiment with other vegetables, such as edamame or diced carrots.
For a smoky flavor, add a pinch of smoked paprika along with the cumin.
Serve as a vibrant side dish or enjoy it as a light vegetarian meal.
