For the best flavor, use high-quality olives. Castelvetrano olives are an excellent choice due to their mild, buttery flavor.
Roasting your own garlic adds a depth of flavor that pre-roasted garlic often lacks. To roast garlic, cut off the top of the bulb, drizzle with olive oil, wrap in foil, and bake at 400°F (200°C) for 45-60 minutes, or until soft and caramelized.
If you don't have a food processor, you can mash the ingredients together by hand, ensuring they are thoroughly combined.
The stuffed olives can be prepared a day in advance and stored in the refrigerator until ready to serve.
