For the best flavor, use high-quality, ripe tomatoes.
If you don't have fresh basil, you can use 1 tablespoon of dried basil, but fresh is highly recommended.
Feel free to add a pinch of red pepper flakes for a touch of heat.
Serve immediately after adding the Parmesan cheese to prevent it from clumping.
This Checca is also delicious tossed with hot pasta or served as a topping for grilled chicken or fish.
