Strain the Mixture: Set a fine-mesh strainer over the same saucepan you used for the simple syrup. Pour the celery mixture into the strainer. Using a spoon or spatula, press the mixture against the strainer to extract as much juice as possible, leaving behind the pulp. (Approximately 5 minutes)

Chill the Juice: Cover the strained celery juice and refrigerate until thoroughly chilled. This step is crucial for achieving the right texture in the sorbet. (At least 1 hour, preferably longer)

Churn the Sorbet: Pour the chilled celery mixture into your ice cream maker and freeze according to the manufacturer's instructions. (Approximately 20-25 minutes)

Harden the Sorbet: Once churned, transfer the sorbet to a freezer-safe container. Press a piece of plastic wrap directly onto the surface of the sorbet to prevent ice crystals from forming. Cover the container with a lid and freeze until firm. (Approximately 4 hours or overnight)

For a more intense celery flavor, use celery leaves in addition to the stalks.
Adjust the amount of lime juice and salt to your taste. The lime helps to balance the sweetness, while the salt enhances the celery flavor.
If you don't have an ice cream maker, you can still make this sorbet! Pour the chilled celery mixture into a shallow dish and freeze for 30 minutes. Remove from the freezer and use a fork to break up any ice crystals that have formed. Repeat this process every 30 minutes for about 2-3 hours, or until the sorbet has reached your desired consistency.
Serve the sorbet as a palate cleanser between courses, or as a refreshing dessert. It pairs well with grilled fish, salads, or even spicy dishes.
