Add Remaining Ingredients: Add the rye flour, bread flour, cornmeal, sugar, dried thyme, salt, grated carrots, and vegetable oil to the bread machine pan. Ensure ingredients are added in the order recommended by your bread machine's manufacturer. (2 minutes)

Select Settings: Select the 'Basic Bread' setting on your bread machine. Choose your desired crust color (light, medium, or dark). (1 minute)

Start the Machine: Press the 'Start' button to begin the baking cycle. (1 minute)

Cool and Slice: Once the baking cycle is complete, carefully remove the bread from the machine. Let it cool completely on a wire rack before slicing and serving. This will prevent a gummy texture. (60 minutes)

For a richer flavor, lightly sauté the grated carrots in a tablespoon of butter or olive oil before adding them to the bread machine.
Fresh thyme can be used in place of dried. Use 4.5 tablespoons of fresh thyme, finely chopped.
Adjust the amount of water slightly depending on the humidity in your kitchen. The dough should be soft and slightly sticky but not overly wet.
If you don't have a bread machine, you can make this dough by hand or in a stand mixer and bake it in a conventional oven at 375°F (190°C) for about 30-35 minutes, or until golden brown and the internal temperature reaches 200°F (93°C).
