For a richer flavor, lightly sauté the grated carrots in a tablespoon of butter or olive oil before adding them to the bread machine. Fresh thyme can be used in place of dried. Use 4.5 tablespoons of fresh thyme, finely chopped. Adjust the amount of water slightly depending on the humidity in your kitchen. The dough should be soft and slightly sticky but not overly wet. If you don't have a bread machine, you can make this dough by hand or in a stand mixer and bake it in a conventional oven at 375°F (190°C) for about 30-35 minutes, or until golden brown and the internal temperature reaches 200°F (93°C).
