For a richer flavour, consider using coconut oil instead of canola oil. Adjust the amount of chile pepper to your preferred spice level. Scotch bonnet peppers are traditionally used in the Caribbean but can be very hot. If you don't have fresh cilantro, dried cilantro can be used. Add half the amount as it is more potent. These curried peas are even better the next day, as the flavours have more time to meld together.
