Step

Heat canola oil in a Dutch oven over medium-high heat. Add the diced onion, carrots, salt, pepper, and sugar. Cook, stirring occasionally, until the onion reaches a deep brown color, about 15-20 minutes. This 'burning' of the onions is key to unlocking the dish's full flavour potential.

Reduce heat to medium, add the minced garlic, chile pepper, grated ginger, and curry powder. Stir constantly to incorporate all the flavours, about 5 minutes.

Increase heat to medium and pour in 1 can of vegetable broth. Use a wooden spoon to scrape up any vegetables or curry powder stuck to the bottom of the pot, ensuring every bit of flavour is infused into the broth.

Add the lentils and the remaining 1 can of vegetable broth. Cook until the lentils are tender, about 30 minutes.

Stir in the chopped fresh cilantro just before serving. Garnish with additional cilantro to taste.

For a richer flavour, consider using coconut oil instead of canola oil.
Adjust the amount of chile pepper to your preferred spice level. Scotch bonnet peppers are traditionally used in the Caribbean but can be very hot.
If you don't have fresh cilantro, dried cilantro can be used. Add half the amount as it is more potent.
These curried peas are even better the next day, as the flavours have more time to meld together.
