For an extra layer of flavor, sauté a diced shallot and a clove of garlic in a tablespoon of butter before adding it to the chicken and vegetable mixture. Feel free to use your favorite mix of vegetables. Diced carrots, peas, corn, and green beans all work well. To make individual pot pies, divide the chicken mixture among ramekins and top with the biscuit batter. Reduce baking time by 5-10 minutes. If the biscuit topping is browning too quickly, tent the pie with foil during the last 10-15 minutes of baking. Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the oven or microwave.
