Steam the broccoli florets: Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil over high heat. Add broccoli florets, cover, and steam until tender-crisp, about 3-5 minutes. (8 minutes)

Prepare the cheese sauce: In a separate saucepan, melt 5 tablespoons of butter over medium-low heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a smooth roux. Gradually pour in the milk, whisking continuously to prevent lumps. Cook, stirring, until the sauce thickens, about 3-5 minutes. (7 minutes)

Remove from heat and stir in the shredded Cheddar cheese, salt, pepper, garlic powder, and onion powder until the cheese is melted and the sauce is smooth and creamy. (3 minutes)

Assemble the gratin: Drain the steamed broccoli florets thoroughly and transfer them to a greased 9x13 inch casserole dish. Pour the cheese sauce evenly over the broccoli. (5 minutes)

Prepare the breadcrumb topping: While the gratin is baking, crush the stale bread into coarse crumbs. Melt the remaining 1 tablespoon of butter in a skillet over medium heat. Add the bread crumbs and sauté, stirring frequently, until golden brown and crispy, about 2-3 minutes. (5 minutes)

Sprinkle the golden breadcrumbs evenly over the broccoli gratin. Return the dish to the oven and bake for an additional 5-7 minutes, or until the breadcrumbs are nicely browned and the gratin is bubbly. (7 minutes)

For a richer flavor, try using Gruyere or Fontina cheese in addition to or in place of the Cheddar.
Add a pinch of nutmeg to the cheese sauce for a warm, subtle spice.
Feel free to experiment with different vegetables! Cauliflower, asparagus, or even Brussels sprouts would work well in this gratin.
If you don't have stale bread, you can lightly toast fresh bread in the oven and then crush it into crumbs.
Make sure to drain the broccoli very well after steaming to prevent a watery gratin.
