In a large pot or Dutch oven, cover the black-eyed peas with plenty of water. Soak for at least 6 hours, or preferably overnight. (5 minutes)

Drain and rinse the soaked black-eyed peas.

Return the peas to the pot. Add the diced ham (or ham bone), chopped carrot, and chopped onion.

Cover all ingredients with fresh water, ensuring everything is submerged. Bring to a boil over high heat. (10 minutes)

Once boiling, reduce the heat to low, cover the pot, and simmer gently for 2 1/2 hours, or until the black-eyed peas are tender and creamy. Stir occasionally to prevent sticking, and add more water if needed to keep the ingredients covered. (150 minutes)

Season generously with salt and freshly ground black pepper to taste. Remove ham bone, if used, before serving.

For a richer flavor, consider using a ham bone instead of canned ham. If using a ham bone, remove it before serving and shred any meat from the bone back into the soup.
A bay leaf added during simmering can also enhance the flavor.
Adjust the amount of water to achieve your desired soup consistency. Some prefer a thicker, stew-like soup, while others prefer a thinner broth.
This soup is even better the next day, as the flavors have a chance to meld together. Store leftovers in the refrigerator.
