In a medium bowl, meticulously combine the red chili powder, paprika, salt, ground fenugreek, ground ginger, onion powder, ground coriander, ground cardamom, garlic powder, ground cloves, and ground cinnamon. (2 minutes)

Adjust the chili powder to your desired heat level. For a milder blend, use a combination of mild and hot chili powders.
For a deeper, more complex flavor, lightly toast the whole spices (coriander, cardamom, cloves, and cinnamon) before grinding them. Be careful not to burn them!
This Berbere spice blend is a fantastic addition to lentil stews, vegetable dishes, and can even be used as a dry rub for meats.
