For extra crispiness, broil the potatoes for the last 2-3 minutes of cooking, watching carefully to prevent burning. Feel free to experiment with other herbs like thyme or sage in the butter mixture. If you don't have chopsticks, you can use wooden spoons or simply be very careful when making the slits. Make sure you dry the potatoes well after soaking them in water, otherwise the butter won't crisp them properly in the oven.
