Bake in the preheated oven until potatoes have fanned out beautifully and are cooked through on the insides but delightfully crispy on the outsides, about 45 minutes. Sprinkle 2 tablespoons Parmesan cheese evenly over top and bake until melted and lightly golden, 2 to 3 minutes. (48 minutes)

For even crispier potatoes, try soaking them in cold water for 30 minutes before slicing. This helps remove excess starch.
Feel free to experiment with different herbs and spices. Rosemary, thyme, or garlic powder would also be delicious additions.
If you don't have smoked paprika, regular paprika will work, but the smoked version adds a wonderful depth of flavor.
